We each have our own eating habits, some of which need to change on occasion. My latest challenge has been regarding insulin resistance. Briefly this is my food routine, though, as I mention, it may change due to necessity eventually.
Breakfast starts with a smoothy that contains: Cherries, fresh berries in season or frozen when not available. (Not raspberries due to the seeds.) I have even used dried fruits that get macerated in the blender. Chia Seeds. Kefir (store bought or homemade), ginger, and Ceylon Cinnamon. I make enough for two or three days at a time.
Then onto either Oatmeal Medley or Eggs with Buckwheat Grouts.
The Oatmeal Medley includes ground oats (they look like chunky bits), chia seeds and flax seeds. Usually 1/2 Cup of oatmeal, and 1/4 cup each of chia and flax seeds. Lots of water. 4 cups. I bring this to boil and cook for 20 minutes.
Then I add a cup of pre-soaked and skinned mixed nuts and cook for another 10 minutes. I will add more water if needed.
Then I add dried fruit so it swells but does not lose itself into the medley. I also add about a 1/2 cup of cream and a 1/4 cup of maple syrup. Cooks for 5 minutes more.
This all needs my attention to keep stirring and make sure it doesn't burn. If it starts to burn I quickly pour it into another pan.
This gives me a huge amount of cereal. I put have in a large container for eating in the current week and freeze individual amounts in bottles. These I thaw in water and turn into a serving bowl and microwave. I add more cream, and eat. Yummy.
Buckwheat Grouts and Eggs
According to the "Kasha" label, In a dry frying pan I add a cup of grouts that I've mixed an egg into and keep stirring that while in a microwave I have 2 cups of chicken broth, 2 tablespoons of butter with a little salt heating to a boil, which I then pour into the egg/buckwheat mixture. Cooks covered for 10 minutes until the moisture is absorbed. Makes 4 cups so I have plenty handy for my every other day serving with a couple of fried eggs.
